The wild boar is a lean and tasty meat that lends itself to many recipes, here is Elisa and Laura’s proposal.
Ingredients for 4 people:
500g sliced boar loin,
flour as much as required,
dry Marsala wine as much as required,
herbs and spices as much as required (berries and myrtle leaves, sage, rosemary, pink pepper and a pinch of nutmeg)
Extra virgin olive oil.
Chop the mixture of herbs and spices, coat the boar slices with flour and fry them in oil, quickly sprinkling them on each side with the mixed herbs. Deglaze with the Marsala wine. When cooked, they should remain pink on the inside.
Serve with a cup of red Chianti Colli Fiorentini Riserva – La Spinosa wine
